Ingredients
- 3 lbs Beef Chuck Roast
- Dried Guajillo Chiles
- Dried Ancho Chiles
- 6 Garlic Cloves
- 2 tsp Cumin Seeds
- 4 cups Beef Broth

- Trim excess fat from the beef chuck roast and cut it into large chunks. Season generously with salt and pepper.
- In a skillet over medium heat, toast guajillo and ancho chiles for 2–3 minutes until fragrant. Soak in hot water for 15 minutes to soften.
- Blend soaked chiles, garlic cloves, cumin seeds, and beef broth until smooth.
- In a pot or Dutch oven, combine beef chunks with the blended sauce. Cover and simmer on low heat for about three hours until tender.
