  • 3 lbs Beef Chuck Roast
  • Dried Guajillo Chiles
  • Dried Ancho Chiles
  • 6 Garlic Cloves
  • 2 tsp Cumin Seeds
  • 4 cups Beef Broth

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks. Season generously with salt and pepper.
  2. In a skillet over medium heat, toast guajillo and ancho chiles for 2–3 minutes until fragrant. Soak in hot water for 15 minutes to soften.
  3. Blend soaked chiles, garlic cloves, cumin seeds, and beef broth until smooth.
  4. In a pot or Dutch oven, combine beef chunks with the blended sauce. Cover and simmer on low heat for about three hours until tender.
  5. Shred the beef using two forks and return it to the pot to soak up more flavor.
  6. Warm corn tortillas and fill them with shredded beef. Top with chopped onions and cilantro before serving.
